ONE of my other jobs . . .
So, from time to time, I get the idea in my head that I have time to do a Wedding Cake! Of course in the middle of the project, I am wondering what I was thinking. But, I plug along, and get the job done. I really do enjoy some parts of the work, the creativity of it, and the pleasure that my clients get when they see and taste what I have made for them. I secretly hope that they are not just putting on a "face" and the reaction that I see, is genuine.
Saturday, Sept. 26th 2009 was one of these crazy days for me.
Months and months ago I agreed to do a wedding cake for a friend from work. I watched the excitement build, small steps accomplished, things coming together. Then August hit, OH! I haven't done anything to get ready for this day! I scheduled a tasting with the Bride & Groom, this is my favorite part, and away we go! They made their choices for flavors of cake, fillings, and icings. Good decisions I must say, a good variety.
Saturday, Sept. 26th 2009. With not much wiggle time for error, my project started without a hitch. Things went well while baking, temperatures and timing, cooling and leveling cakes. And then, it happened! Most of my cakes made, even an extra, and the filling, a vanilla mouse, failed. Troubleshooting such an issue can be a challenge. I don't want to start over, but do I know what to do to fix the blob of a mess in front of me? Now, when I say blob, this was not a mixture of ingredients, it was a bowl of liquid with solid masses of white chocolate mush, very ugly. I had to think on it for a good hour or so, all the while, my mess sitting atop the stove gently warming. When I no longer needed the oven, my focus, messy blob. Amazing how things just come to you when you are frantic. A little of this, little of that. Magic happened before my tired eyes, this blob turned into the smoothest Vanilla Mouse I have ever experienced, perfection.
From that moment, back on track! Filled all the cakes, whipped the icing, crumb coated all five cakes, running back and forth to the fridge between each one (one hot day - 100°+). Base coating, then decorate! Jacob, my official assistant for the day, and I out the door about 15 min. late, but not bad! Made a call on the way for set up help, thank you Sandra and Jacob - you two ROCK!!! Set this cake up in record time, flowers and all. Take a breath!!! DONE, you have no idea the lift after stepping back from your very fast, very hard work, brush the hands, and DONE!
